Taftoon Bread Dish

Taftoon bread is the traditional everyday bread of Riab Village, baked both at Ghorbani Bakery and in household ovens. It is made from locally produced wheat flour, water, salt, and occasionally natural sourdough starter, and is baked in a traditional clay oven (beehive-shaped tannour).

The dough is shaped into a flat disc and attached directly to the hot inner wall of the oven. Within seconds, the bread rises, develops golden-brown spots, and releases a distinctive aroma of wheat and wood smoke. Taftoon is thick, soft, and slightly elastic, forming the staple bread of every Riabi table.

Visitors staying in the village’s eco-lodges can participate in bread-baking workshops and prepare their own bread under the guidance of local grandmothers. This experience is one of the most authentic moments of a journey into the desert.
